Lentils have beneficial nutrients like fiber, protein, minerals and vitamins, they are still low in calories and contain virtually no fat and few carbohydrates. They help to reduce blood cholesterol, reduce the risk of heart disease, prevent constipation and other digestive disorders(irritable bowel syndrome and diverticulosis), stabilize blood sugar levels and they are a very good source of protein.

Waffles made from lentil flour - recipe:
150 gr green(or red) lentil flour (grind the lentils to obtain the flour with a regular coffee grinder)
50 gr rye flour(for bread) + same volume of wheat bran
1 egg
milk (~300ml)
salt + other condiments to taste + 15 drops of Stevia sweetener


Mix all ingredients with a whisk. Leave for 3 hours so that the lentil flour absorbs the liquid and gets softer.
Use a waffle machine to cook this dough. I used a basic Tefal waffle maker.
