My choice of pumpkin for this is Cucurbita Moschata pumpkin.

Recipe:
Just cut it into pieces and bake it in the oven for 1 hour and 15 minutes. No need to add anything, because it is sweet and tasty! If you leave it long enough in the oven it will caramelize and get a very nice taste.

Health info:
Pumpkin is low in fat and calories and rich in disease-fighting nutrients such as: alpha-carotene, beta-carotene (vitamin A), fiber, vitamins C and E, Potassium, Magnesium, Pantothenic acid.
It is a strong antioxidant, therefore it has anti-aging and disease-fighting properties. It is also very good when dieting.

For this you need:
- 1/2 green salad;
- 3 pleurotus mushrooms cut and grilled or fried in e teflon pan;
- a few pieces of chopped prosciuto(dried ham), just for taste;
- 4-5 cherry tomatoes;
- a few red onion rings;
- 3 spoons of boiled red beans(the recipe is the same as for the mashed beans, except for the mashing part. You can cook a bigger quantity and keep it in the freezer).
For the sauce just mix olive oil with sault and pepper and pour it over the salad.
